I have a lot of variations of buttons in my UI Kit. E.g. I have a primary button inside a symbol which is my inactive button, so basically a primary button with some opacity applied.
They all changed their symbol-size according to the applied padding and the override typed in.

They appear correct, but the symbol-size stays the same.
In Sketch v54 this is not happening anymore, but was before and was a blessing when it came to stacks with nested symbols.

+1 to this, it seems to work fine if not inside a symbol.

+1 It only started cropping up for me recently.

I just posted about this in another issue – see #112 (comment). Maybe this helps?

Summary: check 'Enable Padding and Stacks for Nested Symbols' in plugin options.
