Export emacsPackages as emacs.pkgs

Describe the bug

The use of emacsPackages was deprecated in #107152:

The previous versioned names emacsPackages have been moved to
aliases.nix and are now considered deprecated in favour of emacs.pkgs.

Since #113713 emacs packages are again exported into packages.json but as emacsPackages.

Please find a solution so they are listed as emacs.pkgs to be consistend with documentation.

The file to change is https://github.com/nixos/nixpkgs/blob/master/pkgs/top-level/packages-config.nix.

A big problem is that nix-env doesn't seem to want to recurse into the attrs of a drv which makes sense as there are a bunch of derivation-internal derivations inside which you wouldn't want to show up in the list.

I don't think I'm a fan of putting important things like large sets of derivations inside a derivation; it should be elemental (as nix-env assumes). Putting something inside a drv for convenient access is absolutely fine with me but I don't think it should be the canonical location for that thing.

Maybe we should rethink #107152 instead of finding a solution to this surprisingly hard problem.
