Some of the properties in the schema are dates - can we settle on a format for this? (ISO timestamps?)

I would say probably UTC ISO timestamp.

2018-01-16T09:30:39.974659+00:00 or 2018-01-16T09:30:39.974659Z, but also 2018-01-16T09:30:39Z, since microseconds are implied as 0
