Bug: API is not supported anymore

Description

Apilayer no longer supports restcountries.eu. The original project has now moved to a subscription base API. There is a similar open source project that has been cloned from the original one and can be used instead - https://gitlab.com/amatos/rest-countries.

Full thread: What happend to the api? is it down forever? will it come back?

* fix: replace API with a new one

## How does the solution address the problem

This PR will replace [the original API](https://github.com/apilayer/restcountries), which [no longer works and is not supported](apilayer/restcountries#253), with [a similar one](https://gitlab.com/amatos/rest-countries) based on a clone of the original.
