Related to #239, because none of the existing tests validate against the schema when nmdc-schema changed we realize that nmdc_automation/import_automation/activity_mapper.py should also be updated.

success criteria:
At least one test for activity_mapper.py and one test for create_activity_record which are checked against the version of nmdc-schema specified in pyproject.toml
